INGREDIENTS (For all ingredients, please use organic versions if available)

For the Simple Vegan Curry, the ingredients are: 4 vegan Big Franks or vegan sausages, 2 button mushrooms, 1/2 eggplant, 1 packet of tofu (200g), 1 tablespoon of vegan butter (or vegetable oil), 500 ml of coconut milk, 1 teaspoon of coriander seed powder, 1 teaspoon of ground black or white pepper, 1 tablespoon of apple seasoning (mushroom or vegetable seasoning), Salt to taste, 4 tablespoons of vegan curry paste, Maggi or soy sauce, ½ - 1 teaspoon of coconut sugar or apple juice.

Side dish: Vegetable Stir Fry, Snow peas, 1/2 red bell pepper, 1 tablespoon of vegan butter (or cooking oil), 1 cooking spoon of apple seasoning, Maggi or soy sauce, Coriander seed powder
